Tay Plummer
Tay is originally from Redding, California and made the move to San Luis Obispo to pursue her passion for hair and step into a new chapter alongside her best friend. After graduating from cosmetology school in Paso Robles in 2025, she joined the Gypsy & Oak team with excitement and a big heart for both hair and people.
Tay loves creating beautiful hair while also making her chair feel like a safe, welcoming space. She enjoys a variety of services, with a special love for a bouncy, polished blowout. Her approach is fun and personable, while still taking each guest’s hair goals seriously. She is passionate about helping clients feel heard, cared for, and confident in their look, and believes that even something as simple as a great blowdry can make all the difference at home.
Outside of the salon, Tay can usually be found at the beach with her girlfriends or at heated yoga. She loves baking, is known for her banana bread, and will happily talk rom-coms for hours.
Tay is excited to continue growing behind the chair at Gypsy & Oak and looks forward to welcoming you in for a service that leaves you feeling both confident and cared for.

New guest color packages account for the extra time that's usually needed when seeing a new stylist.
Root Coverage Color $180
Designed to cover or blend gray and refresh your base color. Best for guests with up to 1 inch of new growth (about 8 weeks since your last service).
This service does not include highlights or added dimension.
Includes a gloss to refresh the ends, plus a haircut or treatment, and a wash and blow-dry style.
**Additional color and cost may be required for longer or thicker regrowth.
Blonding & Dimension $245
Designed for guests who want to be lighter and brighter throughout the hair, with dimension from root to ends. Ideal if your current blonding needs a full refresh or you’re ready to add more brightness while still keeping a natural, dimensional look.
Includes a custom toner/gloss, plus a haircut or treatment, and a wash and blow-dry style.
**If it’s been 12+ weeks since your last blonding service or you’re looking for a more significant change, a longer session may be recommended.
Full Color & Blonding $305
For guests needing a more comprehensive color appointment.
This session is ideal when multiple services are needed in one visit, such as combining gray coverage with highlights, significantly lightening your hair, or reworking previous color.
Best suited for hair that requires extra time, a more customized approach, or more detailed work to achieve your desired result.
Includes a custom toner/gloss, plus a haircut or treatment, and a wash and blow-dry style.
**If you’re looking for a more routine blonding refresh, a Blonding & Dimension session may be a better fit.
Gloss & Blow Dry Style $70
For refreshing color between highlight or color appointments. This quick demi- permanent color service helps cancel unwanted tones (like brassiness or dullness), adds shine, and keeps your color looking its best.
Ideal every 6–8 weeks.
Includes blow-dry and style.
Haircut with Wash & Style $65
A customized haircut designed around your hair type and goals. This service includes a wash, cut, and a styled finish so you leave feeling polished and put together.
Perfect for maintaining your current shape or making subtle updates to your look.

Wash & Blow Dry Style $45
A relaxing shampoo and blow-dry style for that “just left the salon” polished look. Hot tool styling can be added as well.
Clipper/Short Cut $35
A clean, tailored cut using either scissors all over or clippers on the sides and back, with scissors typically used on top for a custom finish. Ideal for short styles with hair length above your ears that need regular maintenance.
